About Us

The Elmwood Locker was started by Jerome A Powers in 1956. Son John started at 6 years old helping with various chores and clean up. John worked off and off through his school years and in 1969, enlisted in the United States Marine Corps and served in South Vietnam from 1969-1971. After coming back from Vietnam, John helped out at the Locker, re-learning all the different aspects of the slaughter and butcher processes.

In 1986 Jerome passed away and John took over the Locker full time. At the time, the Elmwood Locker was processing pork and beef in large quantities. In 1989 John decided to try making beef jerky in an old brick smokehouse on the property. Each batch was an experimentation with different seasonings, temperatures and cook times. One day in 1989 John had landed on a batch that he really liked. He gave some samples to a couple employees and customers and everyone had the same opinion. So John made up a sample tray and walked it down the block to his buddy that owned and operated The Corner Inn. The next morning when John arrived at the Locker, there was his buddy, parked out front waiting for him to arrive. "Hey I want to buy some of that Jerky" his friend exclaimed! There was one problem, John hadn't been writing down the details of each batch of jerky so re-creating this exact batch would be a problem. After trying to recreate it five or six times with no success, John had to tell his buddy he was not able to get recreate the exact batch that all the customers at The Corner Inn liked so much. During this time, beef jerky was just a hobby. Working on average 16 hours a day just to keep up with the processing demands gave little time for experimenting with beef jerky.

As we've heard many times before and as John recalled for me as if it were yesterday, John went to bed one night and when he awoke in the morning, the exact recipe of spices and cook time was as clear as day in his mind. He went into work that morning and mixed a batch of spice together and smoked an exact duplicate of the batch that was so enjoyed by the patrons of The Corner Inn just a month or so before. Thus J & J Meat Products (Jerome & John) Hillbilly Style Old Fashioned Beef Jerky was born.

Currently, the Hillbilly Style Beef Jerky, made from the tender brisket, comes in three flavors; Old Fashioned, Pepper and Cajun. Over the years, John has also developed beef sticks which come in five flavors; Regular, Regular with (Sharp Cheddar) Cheese, Habanero Barbecue and (Sharp Cheddar) Cheese, Jalapeno Pepper and (Sharp Cheddar) Cheese and Regular with (Pepper-jack) Cheese. All beef stick products come with an edible collagen casing and have no m.s.g. and are gluten free. Each stick is approximately 0.2 lb.

There is also a beef roll product line. The flavors include Summer Sausage, Regular Beef with White Hot Pepper Cheese, BBQ Jalapeno with (Sharp Cheddar) Cheese and Cooked Salami. Each roll is weighs 1 lb and contains no m.s.g and is gluten free.
